Multi-channel temperature profiler for canned food products using PC and microcontrollers

Abstract

We present a temperature profiler system for canned food products. The system uses microcontrollers as data acquisition unit and .NET Graphical User Interface program for control. The data acquisition unit gathers temperature and pressure data of the canned food products and the retort vessel using thermocouples and pressure sensors. The laptop computer stores, graphs and analyze the data using the General and Formula methods. The study showed that the system can perform thermal processing and data analysis efficiently with 0.000 standard deviation and a 0.000% percent difference on all the General Method variables. Majority of the Formula Method variables also showed percent difference values of 0.000% except for the lethal rate fh/U and lethality Fo with 0.084% and 0.059%, respectively.
